Easy to Make Meals to Stay Healthy while being busy

Recipe 1: Yoghurt curry dressing over brown rice salad

Ingredients:

  • One tub of plain low-fat yoghurt, weighing 125 grammes 
  • Curry powder, one tablespoon (15g) 
  • A single 250-gram bag of brown rice that can be microwaved 
  • Two handfuls (80g) of mushrooms and peppers.

Preparation:

Put the low-fat yoghurt and curry powder in a bowl. Put the precooked rice, peppers, and mushrooms in a microwave-safe bowl. The yoghurt curry dressing should then be added.

Recipe 2: Low Carb Cauliflower Mac and Cheese

Ingredients:

  • Olive oil: you can use any other oil as well just as per your suitability. 
  • Cauliflower: Use pre-cut cauliflower to save time.
  • Yellow onion: In this case, a white onion would be a better option.
  • Margarine can be used in place of butter.
  • Milk: You can use regular milk, skim milk, or half and half.
  • Light cream cheese: Instead of using light cream cheese, you can use twice as much cheddar cheese.
  • Cheeses that pair well with cheddar include Gouda, Swiss, and mozzarella.
  • Chopped chives: Feel free to leave out the chopped chives entirely.

Preparation:

Cook the cauliflower and onions in the oven until they are thoroughly cooked. Cream cheese, cheddar cheese, butter, and milk should all be beaten together. Simmer until smooth.

Toss the cauliflower with the cheese sauce and serve.

Recipe 3: Overnight Oats

Ingredients:

  • Water 
  • Oats

Prepration:

Too busy to prepare hot oatmeal in the morning? The night before, prepare these overnight oats. They make the ideal grab-and-go breakfast when kept in a Mason jar.

Recipe 4: Warm Broccoli Salad

Ingredients:

  • Chop 1 head of broccoli coarsely. Trim and finely slice 1/2 bunch of kale.
  • 1 clove crushed garlic
  • 1 heaping teaspoon freshly grated ginger.
  • Combine 2 tablespoons olive oil, sea salt, and pepper to taste.
  • One whole lime.
  • Chop one bunch of coriander and a handful of tamari-roasted almonds.
  • Green chilli is optional.

Preparation:

In a large skillet over medium heat, sauté the broccoli with the olive oil, garlic, and ginger, stirring periodically, until cooked through. It should take about three minutes.

Toss in the kale until it barely starts to wilt. If you’re using chilli, add it.

Pour in the lime juice and top with coriander. Add plenty of black pepper and season to taste.

Recipe 5: Microwave mushrooms and peppers omelette in a wrap

Ingredients:

  • Two 120g medium eggs
  • 50g of one medium wholewheat wrap
  • One sprinkle of black pepper
  • Two handfuls (80g) of peppers and mushrooms
  • Five extra virgin olive oil spray applications are possible (optional). 

Preparation:

Spray (or don’t) a microwave-safe bowl, crack the eggs into it, season with black pepper, and then use a fork to mix. Add some sweet peppers and mushrooms. We advise using three to four pieces altogether for optimal effects.

 

Put another plate or at least a paper towel over the bowl and microwave it for one minute. Then, microwave it again in one-minute increments until the egg mixture solidifies and the whites are no longer translucent and runny.

 

A medium tortilla should be soft after 30 seconds in the microwave. After cutting the omelette into strips, cover the tortilla with them, and then roll it up. 

Wrap the remaining peppers and mushrooms in paper towels (they leak a lot of water) and microwave individually. Serve as a side salad.
